The Famous CTE Concession Cookie Recipes!

One of the reasons concessions are so popular is because of the famous giant CTE cookies.  Here are the recipes for Chocolate Chip and Snickerdoodle cookies.

Use ¼ cup measure to make giant CTE cookies.  Everybody’s oven temperature is a little different, so you may have to experiment a little to get the cooking time right.

 Chocolate Chip Cookies

2 cups butter, softened

1 – ½ cups granulated sugar

1 – ½ cups brown sugar

4 eggs

2 tsp vanilla

4 ½ cups flour

2 tsp salt

2 tsp baking soda

2 tsp hot water

4 cups chocolate chips

Heat oven to 375 degrees.  Beat butter until smooth.  Add granulated and brown sugar and beat until thoroughly blended.  Add eggs and vanilla and beat until light and fluffy.  Combine flour and salt.  Stir the baking soda into the hot water.  Add half the flour mixture to the butter-sugar mixture and beat well, then beat in the baking soda and water.  Add the remain flour and beat until well mixed.  Stir in chocolate chips.  Use ¼ cup measure to scoop dough and place on cookie sheet.  Cook 10-12 minutes (may need more time) until done.  Cook on rack.

Snickerdoodles

1 cup unsalted butter, butter, or margarine, softened

1 cup shortening

3 cups sugar

4 eggs

5 ¼ cup flour

4 tsp cream of tartar

2 tsp soda

½ tsp salt

4 tbsp brown sugar

4 tsp cinnamon

Heat oven to 400 degrees.  Mix butter, shortening, sugar and eggs together thoroughly.  Blend flour, cream of tartar, soda and salt.  Blend into butter mixture.  Chill slightly if too sticky to handle.  Mix brown sugar and cinnamon very well.  Use ¼ cup measure to form balls of dough.  Roll in sugar/cinnamon mixture.  Place apart on cookie sheet.  Bake 10-12 minutes (may need more time) or until done.  Cool completely on rack.
